International Belgian Waffles!

150 g plain white flour
1 1/2 teaspoon baking powder
3 tbsp icing sugar
250 ml milk
3 large eggs, separated
2 tbsp melted butter or sunflower oil
pinch of salt

1. Sift the flour, baking powder, salt and suger into a bowl
2. add milk, egg yolks and butter and whisk to a smooth batter
3. whisk the egg whites in a clean bowl until soft peaks form
4. fold into the batter
5. lightly grease a waffle maker and heat until hot
6. pour the batter into the waffle maker and bake until golden brown

Famous Belgian Waffles!

4 cups self rising flour
2 sticks baking butter
1 cup sugar
3 packages of vanilla sugar (If this is hard to find, just use a bit of vanilla extract)
4 eggs
1/2 cup of milk
1/2 cup of oil

1. Let the butter warm up to room temperature
2. beat the butter until creamy
3. add the sugars and beat some more
4. separate egg whites and beat them till snow
5. add egg yolks to batter
6. add oil and milk
7. add the flour and mix until you get a nice batter
8. fold in the egg snow
9. bake in hot waffle maker
10. server hot with your favorite topping!

Valentine Waffles made by a husband who does not really follow recipies

4 cups of self rising flour and a bit of corn starch
7 - 9 eggs
a little bit of melted butter or margarine
4 cups of milk
1 package of yeast
little bit of sugar

1. separate the egg yolks from egg whites and beat the egg whites to snow
2. put the egg yolks in kitchen aid and add melted butter
3. add milk and mix well
4. add flour (with corn starch) and keep on mixing with kitchen aid
5. add the sugar
6. dissolve yeast in a bit of lukewarm water and add to mixture
7. take your dough out of the kitchen aid and fold in the egg whites
8. bake in hot waffle maker
9. serve hot with your favorite topping!

Ps. When we have lots of people over, we sometimes bake with 3 waffle makers at the same time!

Belgian Family Recipe for Every Day Waffles!

8 cups of flour
2 cups of SPARKLING water
4 cups of milk
2 cups of butter or margarine
5 eggs
4 packages of vanilla sugar (if you can't find this, use vanilla extract to taste)
2 packages of dry yeast
2 tablespoon of sugar
1 tablespoon of oil

1. Put a big pan on the stove and make the milk lukewarm
2. add the butter and let it melt
3. take it of the stove and add the water
4. in another bowl put the flour
5. add the sugar, separate the egg whites and add the egg yolks to the flour
6. beat the egg whites to snow and fold them with WOODEN spoon under the dough
7. let rise for about 15 minutes under a towel in warm place
8. stir the dough once and let rise until it doubled in size
9. bake in hot waffle maker!
10. eat warm with your favorite toppings!

Girl-Scout Waffles!!!

These are waffles that the scouts in Belgium like to make for fundraising or just because they want to eat them themselves!  With this recipe you can make about 40 waffles!
8 cups of self rising flour
4 cups of milk
2 cups of water
3 tablespoons of sugar
2 packages of vanilla sugar (if  you can't find this, just use vanilla extract)
1 package of backing powder
1 tablespoon of oil
1 cup of butter
2 eggs

1. Mix flour, vanilla, sugars, backing powder, oil, egg yolks and liquids in a BIG bowl
2. melt the butter and let cool of
3. add butter to mix
4. take the egg whites and beat them to snow, fold them under the dough
5. bake in hot waffle maker!
6. Eat hot with favorite topping!

Belgian Breakfast Waffles

2 cups of self rising flour
1 egg
2 tablespoons sugar
1/3 cup of high quality butter
2 cups of SPARKLING WATER
pinch of salt

1. Take big bowl and sift the flour
2. add salt, sugar
3. melt the butter and add to mix
4. add sparkling water and mix well
5. add egg yolks one by one and mix well
6. beat egg whites to snow and fold nicely under the mixture
7. bake immediately!

Add your favorite topping!

Every Day Waffles!

8 cups of self rising flour
3 cups of SPARKLING water
3 cups of milk
8 eggs
1 1/4 cup butter
vanilla extract (or if  you can find it 3 packages of vanilla sugar)

1. Mix flour with the water, milk and vanilla
2. stir well so you get a light dough
3. add egg yolks
4. melt the butter and add to mixture
5. whip the egg whites to snow
6. fold the egg whites into the dough
7. heat your waffle maker and start baking!

Warm Waffles Made with Ice Cold Water!

8 cups of flour
2 packages of dry yeast
4 eggs
1 cup of butter
2 tablespoons of white sugar
vanilla (in Belgium we use vanilla sugar, but a bit of extract will do the job)
1 tablespoon of Potato starch
3 cups of milk
2 cups of water
1 cup of ICE water
1 tablespoon oil


1. Dissolve the yeast in a bit of lukewarm water
2. put flour in a big container and add the yeast mixture
3. add the sugar, the vanilla,  and the egg yolks
4. put a pot on the stove and warm the milk and the 2 cups of water, let the butter melt in it
5. add this with the flour mix and stir well
6. let rise for about an hour in a warm place
7. whip the egg whites to snow
8. add the spoon of oil to the mixture
9. fold in the egg whites
10. heat your waffle maker
11. add the ice water to the dough
12. bake in hot waffle maker!

Working with the ice water, gives you a crispy waffle on the outside and soft on the inside.  Nice with fruit, butter, powder sugar and/or whipped cream!

Very Light Warm Belgian Waffles!

2 cups self rising flour
1 cup milk
2 cups of SPARKLING water
3 tablespoons of butter (=about 100 gr)
2 eggs

1. Put flour in big bowl
2. add the milk little by little and mix well
3. add egg yolks and mix well
4. add the sparkling water
5. melt the butter and add to the mixture
6. take the egg whites and whip them until they are stiff
7. fold them nicely under the dough
8. heat your waffle iron and bake the waffles when it is hot

As you can see, there is no sugar in the dough, so you can choose your own "sweetening" topping!

Grandma Waffles!

This is a recipe from around 1912 in Belgium!


8 cups of all purpose flour
2 1/2 cups water
2 1/2 cups milk
2 cups sugar
2 cups margarine
5 eggs
1 teaspoon soda
1 teaspoon cream of tartar

1. Take a big pot and warm up most of the water and milk together until lukewarm
2. add sugar and margarine and let melt
3. take off the stove and let cool off a bit
4. add the egg yolks and mix well
5. take egg whites and beat them to snow
6. add flour to milk mix and mix well
7. fold in the egg snow
8. take a bit of the left over water and solve the soda in it, add it to mixture
9. do the same with the cream of tartar and also ad to mixture
10.  bake in hot waffle iron!

Inauguration Waffles!

This is a recipe from Annick's Grandmother in Belgium!

8 cups of all purpose flour
4 cups of milk
1 1/4 blocks fresh yeast (0.6 once size)
1 cup butter (or margarine)
1 cup and 1/4 white sugar
3 eggs
1 tbsp oil
pinch of salt

1. Melt the butter in a pan on a light fire or in the microwave and set aside
2. make your milk lukewarm on the stove and add sugar and yeast
3. put the flour in a big bowl and whisk the milk mix into it
4. separate egg whites and beat them to snow, set aside
5. add egg yolks to mixture and whisk well
6. add oil and butter
7. whisk well until you have a smooth batter
8. slowly fold the egg whites under the batter
9. let rise for at least 30 minutes or until it doubled in size
10. heat your waffle maker and start baking!

Authentic Belgian Waffles

8 cups of all purpose flour
3 cups of milk (2% is fine)
3 cups of SPARKLING water
1 package of yeast
pinch of salt
4 sticks of butter
8 eggs
1 tablespoon white sugar

1. heat butter and milk together until luke warm
2. add sugar and take off the stove
3. add the sparkling water, the flour and the yeast (broken in a little bit of water)
4. separate the egg yolks from the white and add the yolks in the dough mixture
5. whip egg whites until stiff, together with the salt and fold it under the dough
6. leave it in a warm spot and let rise for 1/2 hour
7. bake in hot waffle maker
8. serve with powdered sugar en/or your favorite toppings on top!

Waffles from Brussels

8 cups of all purpose flour
1 package of yeast
3/4 cup of butter
3 cups of milk
4 cups of sparkling water
4 eggs
pinch of salt
1 table spoon of white sugar

1. heat the milk a little bit (NOT boiling) and set aside
2. melt the butter in a big cooking pot
3. add the milk and water to this pot
4. gradually add the flour and mix well
5. add the sugar and keep on mixing
6. add the salt
7. let the dough rest for 1/2 hour in a warm space, so it can rice until double of its size
8. let your waffle maker get hot and before you start baking, you grease it with a bit of cooking oil.
9. bake the waffles until golden brown
10. serve them with powdered sugar or your own favorite topping!
